Very healthy,  moist and fluffy banana walnut muffins, perfect for breakfast or tea break. Natural sweetness from banana, with honey, make the muffins extra healthy without adding extra sugar.

Ah muffins again! I think the variations of muffin is endless, just anything goes well. Love this super moist banana muffins, topped with walnuts. Sweetness from the honey, no sugar added, well, healthy enough for me. 😉

Muffin is one of the easiest things in baking, mix wet ingredients, mix dry ingredients, combine together then bake! How easy is that?! Hope you love it!

Banana Walnut Muffins

很多人都喜歡吃的muffin鬆餅,這次做香蕉核桃口味,營養豐富。利用熟透的香蕉做,增加甜味而可減少用糖,減輕負擔~核桃香脆,muffin濕潤鬆軟,超美味的!

做法只有幾個步驟,免機器,新手也可輕鬆做到,快試試~

Banana Walnut Muffins

Use the fork to mash the bananas, set aside. 

先用叉壓香蕉成泥,備用 (如香蕉不太熟,可將香蕉放入冰箱約15分鐘,至蕉皮變黑)

Mix the beaten eggs, honey,oil and milk together, until well combined.

將雞蛋打散,然後與菜油(煮食用的油),蜂蜜及牛奶拌勻。2016-04-29_04.30.20

In another bowl, mix the baking soda with flour and salt together. Then add in mashed banana, mix well.

後篩入麵粉,鹽及梳打粉baking soda拌勻,最後加入香蕉拌勻。

Then add the wet ingredients into the flour mixture, mix well. Then pour the batter into muffin tins, add some chopped walnuts on top. Sprinkle some brown sugar if you like.

Pop in preheated oven at 180C, bake for 20 -25 minutes.

將麵糊倒入烤模內,再加核桃碎,可在表面灑少許紅糖。放入已預熱180度焗爐,焗約20-25分鐘即成!

Ingredients
  1. 3 bananas
  2. 2 eggs
  3. 80ml vegetable oil
  4. 100ml honey
  5. 70ml milk
  6. 210 gram plain flour
  7. 1/2 teaspoon salt
  8. 1 teaspoon baking soda
  9. walnuts
  10. 材料:
  11. 香蕉 -3條
  12. 雞蛋 -2隻
  13. 菜油 -80毫升
  14. 蜂蜜 -100毫升
  15. 牛奶 -70毫升
  16. 中筋麵粉 -210克
  17. 鹽 -1/2茶匙
  18. 梳打粉baking soda -1茶匙
  19. 核桃 -適量
Instructions
