Chilli con Carne 墨西哥蕃茄辣肉醬

A classic Mexican chilli con carne, chilli with meat. Spicy, hot, delicious and comforting. Great for lazy dinnet or share with friends and families.

Oh I looooove this chilli con carne, it is super spicy (only if you let them be!) , but super delicious. Serve with tortilla, with more mexican mix cheese, sour cream….or just with plain rice, or I just put on pasta. Just so delicious! 

I always make a large pot, then freeze some for next few days,  it tastes even better. Of course you can make the non-spicy version for the kids, with tortilla, who doesn’t like it?

這個墨西哥辣肉醬Chilli con Carne,在美式,墨西哥餐廳必定會有。用牛肉,蕃茄及紅腰豆煮成,當然還有辣椒。味道超香濃,可放在Tortilla薄餅上,加酸奶油及起司包起來吃,或簡單拌飯及麵享用。辣度隨自己喜歡,超美味,一大鍋,超滿足!

Add oil in hot pot, cook the garlic and onion for few minutes until soften. Then add some chilli powder and paprika cook for a minutes. Add in ground beef, cook for 5 minutes. Add beef stock and bring it to boil.

熱鍋下油,下蒜蓉及洋蔥,用中火煮約4分鐘。再下辣椒粉及紅椒粉炒一分鐘。然後下免治牛肉炒5分鐘。再下牛高湯,煮沸。

Then add chopped tomatoes and tomato paste, season with salt and pepper. Once it boiled, add chilli and mix well, turn to low heat, simmer for 45 minutes. Stir from time to time.

Add kidney beans and cook for 5 minutes. Serve with rice or  tortilla, cheese and sour cream.

然後下蕃茄粒及蕃茄膏,下鹽及黑胡椒粉調味,拌勻。煮沸醬汁後,下辣椒。用小火慢煮45分鐘,期間不時攪拌免底部燒焦。45分鐘後下紅腰豆,再煮5分鐘即成!配白飯或墨西哥薄餅,酸忌廉Sour cream及芝士享用。

Ingredients
  1. 500 gram minced beef
  2. 1 onion, finely chopped
  3. 2 cloves garlic, minced
  4. 400 gram chopped tomatoes
  5. 3 tablespoons tomato paste
  6. 400 gram kidney beans
  7. 300 ml beef stock
  8. 1 - 2 chilli
For the Seasoning
  1. 1 - 2 teaspoons chilli powder
  2. 1 teaspoon gounded cumin
  3. 1 teaspoon paprika
  4. 1/2 teaspoon oregano
  5. 材料:
  6. 免治牛肉 -500克
  7. 洋蔥 -1個
  8. 蒜頭 -2瓣
  9. 蕃茄粒 -400克
  10. 蕃茄膏 -3湯匙
  11. 牛高湯 -300毫升
  12. 辣椒 -1-2隻
  13. 紅腰豆 -400克
  14. 調味料:
  15. 辣椒粉 -1-2茶匙
  16. 紅辣粉 -1茶匙
  17. 孜然粉 -1茶匙
  18. 牛至粉 -1/2 茶匙
Instructions
