Chocolate Molten Lava Cake 朱古力心太軟 (流心蛋糕)

What is better than rich chocolate cake? A very indulgent, rich, chocolatey and delicious chocolate molten lava cake. Seriously, a chocolate cake with delicious and gooey chocolate sauce. It is just heavenly!

I tried quite a lot molten lava cake in restaurants and dessert shop, they are delicious but a bit pricey for a little cake. But actually you can easily make it at home, it might look very difficult to make, but it is not! It is just simply mix all ingredients together and bake. The vital part is, to use good quality ingredients (of course, good quality chocolate) and  control the baking temperature and timing. To be honest, I been trying many many times to get the right consistency that I like. So, bake one at a time to find the perfect way for you. If it is overcooked, it is fine, it will be a lovely chocolate cake!

自己其實也可做到,最重要是用高質素的朱古力和注意焗的時間,因各焗爐的火力不同,掌握好自己焗爐的溫度,就可輕鬆做到!當然,我也試了很多個蛋糕才找到最好的效果。建議先試焗一個,再慢慢調節,新手也絕對可以做到餐廳的高級甜品!

Brush some butter in a ramekin, then dust with cocoa powder (you can also use caster sugar) 

Melt the chocolate and butter in microwave for about a minute, mix well.

In another bowl, mix egg, sugar and salt together, then add in chocolate sauce, mix well. Then sift in flour, mix well.

Pour the batter into ramekins, pop in preheated oven at 220C, bake for 8 to 10 minutes. *the surface of the cake should be set

Let it cool for 1 to 2 minutes, unmold it. Dust with icing sugar and serve with ice-cream and fruit. Enjoy!

在烤模內塗一層無鹽牛油,然後平均灑上可可粉,備用 (*這可令蛋糕更易脫模,也可用砂糖代替)

將朱古力及無鹽牛油放入微波爐,或隔水加熱溶化,成朱古力漿,待涼備用。

在碗內,將雞蛋、糖和鹽拌勻,然後加入朱古力漿拌勻,再篩入麵粉,拌勻。

將蛋糕糊倒入容器內,放入已預熱220度焗爐,焗約8-10分鐘。 (*蛋糕的表面要凝固)讓蛋糕待涼1-2分鐘,脫模在碟上,可灑上糖霜及雪糕、水果享用。

  • 80 g chocolate
  • 55 g unsalted butter
  • 1 egg

  • 25 g sugar
  • 15 g all-purpose flour
  • 1/8 tsp salt
