Classic English Scones 經典英式鬆餅/司康

Nothing better for British to have a scone with a cup of tea in afternoon. Perfect golden, crumble scones with clotted cream and jam. 

Mr P, a British, takes his scones very seriously. So my recipe is the traditional, simple, no fuss recipe that real British approved. If I can’t think of what to bake, I always just bake scones. It is hard to go wrong, so easy to make and so delicious! 

The main trick of making scones is not over work the dough. You should use any mixer, just use your hands to form a dough. The scones will come out fluffy, crumble and super delicious. Promise, this is fool-proof recipe that everyone can make it!

英國人下午茶最愛的司康 Scones, 有點脆脆的像餅乾,塗上草莓果醬和clotted cream, 配一杯熱茶,在家High Tea也不錯喔!我的鬆餅食譜是正宗的英式食譜,Mr P 和其他英國朋友吃過都大讚!

做鬆餅不難,注意小秘訣:用手輕力推麵團,不需要搓的。不要用擀麵棒,要用手壓麵團。新手不敗,做出比餅店的更美味的鬆餅!

In a large bowl, mix flour, sugar and baking powder together. Then add in cubed butter, use your hands to crumble the butter and mix with the dry ingredients. 

Add in egg and gradually add in milk, mix well to form a dough. You might not need all the milk, once the dough is formed, then is ok) 

Place the dough onto lightly floured surface, use your hands to form the dough together. Then press the dough into 3 cm thick.Use a cookie cutter to cut circle, place on lined baking sheet. Brush some egg wash on top, bake in preheated oven at 180C, for 15 to 18 minutes or until golden.

 

先將麵粉,糖及泡打粉在大碗內拌勻。然後加入切小塊的牛油,用手捏碎奶油,與麵粉拌勻成顆粒狀。

下一個雞蛋拌勻,再逐少加入牛奶拌勻(*要逐少加入牛奶,可能不需用所有牛奶,成麵團便可)

在枱上灑少許麵粉,將麵團用手堆成完整麵團 (不用搓麵團,堆成完整麵團便可)也可加入葡萄乾。將麵團用手輕力壓至約3厘米厚,然後印出圓形,放在烘焙紙上。

在司康表面刷一層蛋液,使表面焗後金黃色。放入已預熱烤箱180度,烤15至18分鐘,至表面金黃色即成!

  1. 260 gram all-purpose flour
  2. 10 gram baking powder
  3. 50 gram sugar
  4. 75 gram unsalted butter
  5. 1 egg
  6. 60 ml milk
  7. 40 gram raisin
  8. 材料:
  9. 中筋麵粉 -260克
  10. 泡打粉 -10克
  11. 糖 -50克
  12. 無鹽牛油 -75克
  13. 雞蛋 -1隻
  14. 鮮奶 -60毫升
  15. 葡萄乾 -40克
