Classic Spaghetti alla Carbonara

When I was in Roma, my Italian friends love to cook Carbonara after having few days of tomato sauce pasta for a change. This is classic Roma pasta dish, they like to use guanciale (cheek of the pork) to cook, this part of the pork is fat and tender. For the sauce, many people use cream to make it creamy, but this is a HUGE NO! You only use egg , parmesan cheese and pecorino cheese to make the sauce, trust me, the sauce is so creamy and rich. 

The ingredients are super simple, it only takes 15 minutes to make. Once you cook it yourself, you will not want any Carbonara in chain restaurants.

這個絕對正宗的食譜,是不用忌廉的~做法及材料都非常簡單,15分鐘就做到比餐廳吃的更美味!

Classic Spaghetti alla Carbonara

Bring a large pot of salted water to boil, cook the spaghetti and drain well.

煮沸一大鍋水,下兩小匙鹽,煮熟意大利麵,然後瀝乾水份備用。

For the creamy sauce, grate the parmesan cheese (plus some pecorino cheese if you have), mix with two eggs, if you want the sauce extra creamy, you can add one more egg yolk! Add some pepper and pinch of salt to mix everything together.

將Parmesan cheese磨成碎,下雞蛋拌勻,再下鹽及黑胡椒粉調味 (*給2喜歡更Creamy,可多加一隻蛋黃)。2016-02-22_19.37.58

In a hot pan, add a tablespoon of olive oil, cook the bacon cubes for few minutes. Then add in spaghetti and toss well. Turn off the heat, pour the sauce into a pan, then stir it quickly with the spaghetti. Use the heat from the pan to cook the sauce, if it is too hot, the sauce will scrambled.

Place on a plate and add more cheese and black pepper, enjoy!

熱鑊下油,煮煙肉粒數分鐘,然後下意粉拌勻,熄火。倒入芝士蛋黃醬汁,快速與意粉拌勻即成!
*要熄火後才倒入醬汁,利用鑊內的熱力煮熟醬汁,如太熱,會把蛋煮成炒蛋的。

Ingredients
  1. 150 gram spaghetti
  2. 80 gram bacon, cubed (guanciale or pancetta is great)
  3. 25 gram parmesan cheese, grated (also can add some pecorino cheese)
  4. 2 eggs
