Coconut Split Pea Pudding 椰汁馬豆糕

Classic and very popular Asian dessert – coconut pudding with split peas. The pudding full of coconut flavour, with split peas, it is surprisingly match and delicious!

This is my mum’s recipe, she always make this dessert since I was kid. Till now, this is one of her famous desserts for all the family gathering, dinner parties and all sort of event, 

The recipe is very simple, to make the pudding has texture and not mushy, you need to use

這個十分美味又簡單的甜點品,在茶樓經常會有,很受歡迎的~充滿陣陣椰香味,加入馬豆,有口感又營養豐富。

這個是我媽媽用了多年的食譜,每逢家庭聚會,各樣的派對,他都必定會做這個甜品,大受歡迎!

做法非常簡單,冰冰涼涼,最適合悶熱的夏天。作下午茶點或派對小食,大人小孩都喜歡!

Coconut Split Pea Pudding

Cook the split peas with water on medium heat for 15 minutes, then remove from heat and let it rest for 15 minutes. Then cook for 30 minutes more or until the split peas are soft but not mushy.

In a bowl, mix the coconut milk and evaporated milk., then add in corn starch, mix until smooth.  In another bowl, soak the agar-agar until it softened, then drain well.

In a large pot, bring the water to boil, then add in agar-agar, keep stirring until it dissolved. Then add in sugar and cook until it dissolved.

Add in the coconut milk mixture and bring it to boil. Add in the split peas and mix well. Pour the mixture into a container, let it cool completely then chill in fridge for at least 2 hours.2016-08-16_11.09.31

先將馬豆用中火煲15分鐘,然後離火,蓋上煲蓋焗15分鐘,然後再煮約30分鐘至軟身,瀝水備用。

將椰漿與花奶拌勻,再下粟粉徹底拌勻至幼滑沒有粉粒。大菜先用水浸軟,瀝乾水。另一個鍋,煮沸水,下大菜,不停攪拌至完全溶化,下糖拌勻至溶化。

慢慢逐少倒入已拌勻的椰漿+花奶漿,一邊不停攪拌至煮沸。下馬豆拌勻,煮沸後倒入容器內,待涼後放入雪櫃兩小時以上即成!

Ingredients
  1. 150 gram split peas
  2. 300 gram sugar
  3. 160 ml evaporated milk
  4. 300 ml coconut milk
  5. 150 gram corn starch
  6. 1250 ml water
  7. 20 gram agar-agar
  8. 材料:

  10. 糖 300克
  11. 花奶 160毫升
  12. 椰漿 300毫升
  13. 粟粉 150克
  14. 水 1250毫升
  15. 大菜絲 20克
