Crunchy Mini Cookies 小饅頭

Are they adorable? This is a Chinese snack called Siu Mantou, little bun. They are very crunchy cookies, taste actually almost nothing…yes I know, but once you start eating it, you cannot stop! It is also can give it for young kids for baby snack.

If you live in Asia, you properly know what I am talking about, 旺仔小饅頭. So tiny, crunchy and yummy, even they don’t have much taste. How weird is that?! But even now, I still buy and eat the whole pack in one go. This is just the way!

To make this little bun-shape cookies, what you need is patient or more than technique I would say.  The smaller the cookie the crunchier, so you will have to make it super small like maybe a pinky finger nail. If you make it big, it will be very doughy and not nice at all. Good to ask your kids to help! 

Low sugar, no butter, great snack!

大家都喜歡旺仔小饅頭嗎?小時候經常吃的零食,外形可愛,脆脆但又粉粉的,沒有什麼味道。但每次你總會把一整包吃掉!

這個配方非常簡單,但一定要用日式太白粉(在烘焙材料店會買到),也需要一點耐性,要將麵團搓成非常小,像尾指指頭般大,太大粒會變的不脆又粉粉的。最好是叫小朋友一起做,否則一人搓幾百粒便太辛苦喇!

Beat the eggs with sugar, sift in cake flour, potato starch, baking powder and milk, mix well. Use your hands to form a dough, knead for few minutes to bring it together. Add some cake flour if is too sticky, or add milk if is too dry.

將蛋與糖拌勻,篩入麵粉,日式太白粉,泡打粉及牛奶拌勻。用手搓數分鐘成麵團,如太濕潤可加點麵粉,太乾可加點牛奶。

Now roll the dough into tiny balls, like soy bean size. Place on parchment paper and space aparted. They will grow a little bigger, spray some water on the dough, it can help prevent cracking too much.

Bake in preheated oven at 180C for about 10 minutes, until the surface is slightly golden. Flip the balls half way through to make sure cook evenly. Cool on wire rack and it is done!

拿出像黃豆般大小的麵團,搓圓,放在烘焙紙上,隔少許空間。在麵團上噴少許水,可防上爆裂得太厲害。放入已預熱焗爐180度焗約十分鐘,期間將小饅頭反轉另一面再焗。至表面少少金黃色即可。

Ingredients
  1. 1 egg
  2. 45 gram sugar
  3. 145 gram potato starch
  4. 30 gram cake flour
  5. 1 teaspoon baking powder
  6. 20 ml milk
  7. 材料 :
  8. 雞蛋 -1隻
  9. 糖 -45克
  10. 日式太白粉 -145克
  11. 低筋麵粉 -30克
  12. 泡打粉-1茶匙
  13. 牛奶 -20毫升
Instructions
  1. Preheat oven at 180C. Beat the egg with sugar, then sift in potato starch, flour, baking plwder and milk, mix well.
  2. Use your hands to form a dough, knead for few minutes.
  3. Then roll a small dough like soy bean size into a ball. Place on parchment paper and spray some water on top to pretend cracking too much.
  4. Pop in oven for about 10 minutes or until slightly golden, cool on wire rack.
Notes
  1. You can store the cookies into airtight container to store up to a week.
