Homemade McMuffin 自家製豬柳蛋漢堡

Mr P and I loveeeeeee McMuffin, seriously we always looking forward to have it for weekend breakfast. During the lockdown, Mcdonald’s closed for a while and to solve the McMuffin craving, I make it my own.

Few years ago I have shared the English muffin recipe (The bread of the McMuffin), classic English ”bread” that British like to eat it with butter and jam. They are so easy to make, no-oven needed. So soft and delicious! The ”dust” on the muffin is cornmeal, or you can use semolina or polenta. If you can’t find any, just omit it.

The homemade sausage patties also very easy to make, I love to add my own seasoning and make it myself. So, there you have, a high quality, delicious Homemade McMuffin. Enjoy!

平時跟Mr P也超喜歡McMuffin 豬柳蛋漢堡(滿福堡)英國封城後,麥當勞也關門了一段時間,這幾個星期我就自己做McMuffin,比麥當勞的更好味😜

那塊包是英式鬆餅(馬芬)english muffin,做法簡單,不用焗爐,只需平底鑊就做到👍英國人會將麵包切半,然後塗奶油和果醬享用。在家做豬柳蛋漢堡,滿足感超大,超滿足!

Mix yeast , sugar and 50ml of water together, let it set for 15 minutes. There will be bubbles, means the yeast is active.

Mix milk and egg together. Mix flour and salt together in a large bowl. Then add in yeast mixture, butter and milk-egg mixture, mix it together to form a dough.

Place the dough on floured surface , knead the dough for about 10 minutes, or until the dough is smooth. Then put the dough in lightly oil bowl, cover in cling film. Let it rest for 1 to 1.5 hour, or until dough double its size. (If the dough is too wet, add some flour; too dry, add some water)

Take out the dough, press it and release air. Divide into 6 pieces, roll into balls. Place it on baking tray (dust with cornmeal). Cover with cling film and let it rest for an hour.

Place the dough a little bit, then cook it in pan under medium low heat. Cook for about 6 minutes each side. If you worry the muffins not cook enough, you can put in 180C oven, bake for 5 minutes.

For the sausage patties: Mix the minced pork and seasoning together, divide into 4 portions. Place it into a mould, press it, the meat will shrink when cook, so make a slightly bigger one. Cook on a stovetop or bake in oven at 180C, for about 12-15 minutes (Depends how thick your patties are)

For the Egg: Add oil in hot pan, add eggs in egg rings, cook for 3 minutes or until the eggs are cooked.

Assemble: Cut the muffin into half, grill it for few minutes. Then place slice of cheese on the muffin, then sausage patties–> egg–> muffin. Enjoy!

將乾酵母、糖和50毫升的水拌勻,靜置15分鐘,酵母會有氣泡和酸味,就化表酵母已活化。將雞蛋、牛奶拌勻。在大碗內將麵粉和鹽拌勻。然後下酵母液、雞蛋牛奶液和牛油,拌勻。

放在灑有麵粉的枱上,大力搓10分鐘,或至麵團表面平滑和有彈性(有薄膜)。然後在大碗內塗一層油,將麵團放入碗內,用保鮮紙包好,靜置約一個小時作發酵,麵團會脹大一倍 (*如果搓了一段時間,麵糰太濕,可加點麵粉;太乾可加點水)

拿出麵團,分成6等份,然後搓圓。放在灑有玉米麵粉的烤盤上,用保鮮紙包好,再待一個小時作第二次發酵,麵團會稍為脹大

將麵糰輕輕按扁,然後放在平底鑊內,用小火烘每面約6分鐘即成~*如怕鬆餅不熟,可放入焗爐180度C,焗5分鐘

豬柳做法:將免治豬肉和所有調味料拌勻,然後將豬肉分成4份,放入圓形模內,放在平底鑊煎至全熟。也可放入焗爐180度C,焗約12-15分鐘

燒熱鑊後下油,放入煎蛋圈,倒入雞蛋,用叉弄散蛋液,然後用中火煎雞蛋約3分鐘

將鬆餅切半,然後放在爐上烘一烘

將芝士片放在鬆餅上,再加上豬柳、雞蛋,再蓋上另一塊鬆餅即成!

*這個食譜可做6個英式鬆餅
*食譜配料是4個豬柳蛋漢堡份量
*將鬆餅包好,可存放在冰箱一個月

For the Muffin
  • 300 g bread flour

  • 1 tsp garlic powder
  • 1/2 tsp ground sage
  • 1/2 tsp ground thyme
  • 1 tsp salt
  • 1/4 tsp black pepper
Others
  • 4 eggs
  • 4 slices cheese
