Homemade Udon Noodles 自製烏冬麵

You can easily make your own Japanese noodles at home, what you need is salt, water and flour. The noodles are chewy and full of texture, delicious and healthy!

Yes! I can make udon by myself! Here in Asian grocery stores you can easily buy udon noodles, but the original one from Japan is quite expensive. Then I try to make it at home, it is super easy and fun to make! Mr P looooooves it and even ask me to make every week, well, of course I won’t do that, sometimes you just need to wait to appreciate the good things I guess. 😉

The most important tool to make udon is….your feet! Yes, you don’t need pasta machine but your feet to step on the dough, very handy! This will make the udon more ‘elastic’ , chewy and have more texture. Of course you still can use rolling pin and use your whole body weight to roll it, but use your feet is easier and can get better result.

自己做的烏龍麵特別美味,新鮮無防腐劑,健康Q彈有咬勁。材料只有麵粉,水及鹽,比市售的更平宜更美味!Mr P都大讚,還要我每星期都做一次,我當然不會喇!哈哈!

做法是超簡單,不需要機器,但需要一雙腳,用腳踩在麵團上,令麵團更有彈性,煮出來的烏冬麵就更有口感,超容易做!大人小孩都會喜歡,快試試喔!

Mix the salt with the water, then gradually add into the flour and mix well. You may not need to add all the water, once it form a dough is okay. The dough is not smooth at this stage, wrap with cling film and let it set at room temperature for 2 hours.

先將水及鹽拌勻,然後逐少加入麵粉內拌勻。用手搓成麵團,不用大力搓,成麵團便可。麵團表面是不平滑的,用保鮮紙包好,放在室溫靜置兩小時。

2015-08-03_06.30.45Take the dough out, roll a ball and put inside a large ziplog bag. (I only have the small one, so I divide the dough into three pieces). Wear socks, then step on the dough with your feet, press all the body weight on it. Step the dough until it flatten, then take the dough out and fold it into a ball.

Put the dough back into the ziplog bag and step on it again. Repeat these steps 4 or 5 times. At the last time, fold the dough into a ball, then seal the bag tightly and let it rest for 1 hour (2 hours is better tho)

將麵團搓圓,放入密實袋內,放出空氣,然後用腳將麵團踩平。然後拿出麵團,將麵團周邊向中間摺,搓圓,再放入密實袋內再踩平,重覆這幾個步驟五次。麵團會變得較平滑及有彈性。放在密實袋內靜置一至兩小時。

2015-08-03_06.32.58Tip the dough on floured surface, roll into rectangle shape. Then sprinkle more flour on the dough. Fold 1/3 dough to the centre, sprink more flour on the dough surface, then fold fhe other 1/3 dough to the middle, sprink more flour. 

Use very sharp knife to cut the noodles into 2mm thickness. The noodles may stick together, so need to sprinkle more flour to prevent it stick.

將麵團擀成約2毫米mm厚的長方形,在麵團上灑上麵粉。將1/3麵團向中間摺,再在表面灑上麵粉。然後從另一面的1/3麵團向中間摺,再灑上麵粉。用鋒利的刀切約2毫米闊的麵條。放在灑有麵粉的盤上,如麵團很黏,再灑點麵粉。

You can cook the noodles right away in boiling water, cook for 10 minutes. I use the store brought udon soup. Or you can put the noodles (in small portion) into ziplog bag and freeze it.

將烏龍麵放入沸水內煮十分鐘即成!也可將麵條分成小份,約100克一份,放入密實袋,再存放在冰箱一至兩星期。

Ingredients
  1. 300 gram all-purpose flour
  2. 130 ml water
  3. 15 gram salt
  4. 材料:
