Hot and Sour Soup 酸辣湯

Classic Chinese hot and sour soup, very comforting soup with lots of ingredients. Super easy and simple to make, it only takes 30 minutes. So much better than in restaurant.

Hot and sour soup is one of my favourite Chinese soup, every time I go to Chinese restaurant (outside China) , I always love to have a bowl of soup which make me feel like home. I love to make this soup at home, cause I can adjust the seasoning and always add little bit more vinegar. Delicious comforting soup, perfect for winter!

人在外地,每次都中國餐館我都喜歡點酸辣湯,非常溫暖又有家的味道。但自己在家做的酸辣湯絕對比出面的好吃,材料豐富,可自己調較酸辣度,酸辣開胃。

做法超簡單,30分鐘內就煮到一大煲,超滿足!

Marinate the pork with some soy sauce, sugar and corn starch for 15 minutes. Chop of the ingredients into thin slices.

Bring the chicken stock to a boil, add in carrot, shiitake mushrooms, bamboo shoots and pork, cook for 15 minutes.

Then add in seasoning and cook for 5 minutes. Add in tofu, stir it gently then add some corn starch with 3 tablespoons of water to thicken the soup.

Add in beaten egg, let it set for 5 minutes then stir it, you will have a lovely egg drop. Done!

用少許生抽、糖、生粉醃豬肉15分鐘。將所有材料切幼絲,將雞湯煮沸後,下木耳、香菇、紅蘿蔔、竹荀和肉絲,煮15分鐘。然後下調味料,再煮5分鐘。

再下豆腐,輕力拌勻,下生粉和少許水打芡。最後下已打發的雞蛋,待5秒再拌勻,就成蛋花,完成~

Ingredients
  1. few shiitake mushrooms
  2. 1/2 carrot
  3. 20 gram black fungus
  4. 20 gram bamboo shoots
  5. 1/2 box tofu
  6. 100 gram pork
  7. 1000ml chicken stock
  8. 1 egg
  9. 3 tablespoons corn starch
For the seasoning
  1. 2 tablespoons soy sauce
  2. 1 tablespoon dark soy sauce
  3. 1 tablespoon sesame oil
  4. 2 tablespoons chilli bean sauce
  5. white pepper
  6. 材料:
  7. 冬菇 數隻
  8. 紅蘿蔔 半條
  9. 黑木耳 20克
  10. 竹荀 20克
  11. 豬肉 100克
  12. 豆腐 半磚
  13. 雞湯 1000毫升
  14. 生粉 3湯匙
  15. 雞蛋 1隻
  16. 調味料:
  17. 黑醋/白醋 100毫升
  18. 生抽 2湯匙
  19. 老抽 1湯匙
  20. 麻油 1湯匙
  21. 豆瓣醬 2湯匙
  22. 白胡椒粉 少許
