Huevos Ranchero 墨西哥煎蛋早餐

Nothing better than have a delicious big breakfast to start a day! In our home, it can only happen during weekend (well, we all busy!) But we will have a big good one in weekend, and this is one of Mr P’s favourite breakfast. To be honest, I have no idea why he love this so much, I mean is delicious but he is like really happy when we have it. 

Huevos Ranchero

This Mexican breakfast with fried eggs, tomatoes, peppers and cheese all in one pan, then serve with tortillas, sour cream, Mexican refried beans and avocado. A big plate of comfort food, healthy and so delicious.

Very easy to make and I mean REALLY easy! Have a try and let the all-day breakfast have a break! 

Huevos Ranchero

Mr P 每個週末都會有個習慣,就是在家做一個超豐富的早餐,當然,all-day breakfast就是他最常做。但他經常要求想吃這個早餐,是他的最愛!

這個傳統的墨西哥式煎蛋早餐Huevos Ranchero,有蕃茄,甜椒及雞蛋,再加上芝士,就成一鍋到底的豐富早餐~再用墨西哥捲餅皮tortilla包著芝士,焗豆一起吃,好美味喔~

做法實在超超超簡單,但枱上放滿不同的配料,真的很滿足呢!

Huevos Ranchero

Heat oil in hot pan, cook the onion for few minutes, then add in bell pepper, cook for a minutes. Add in chopped tomatoes, season with salt, pepper, chilli flakes and chilli sauce. Bring it to boil then reduce heat, cook for 5 more minutes. You can add the red chilli if desire.

熱鑊後下油,先炒洋蔥一分鐘,然後下甜椒,炒一分鐘。再下蕃茄粒及指天椒,用中火煮沸後,再轉小火煮5分鐘。2016-06-08_10.55.14

Use a spoon to make a well in sauce, then add in one egg, add the rest of the eggs,season with salt and pepper. Put on lid and cook the eggs for 4 to 5 minutes or depends how you like your eggs. 

用匙羹在醬汁中挖一個小洞,然後下一個雞蛋,在雞蛋上加少許鹽及胡椒粉。蓋上鑊蓋,煮3至4分鐘,最後灑上芝士碎即成~

Sprinkle with cheddar cheese on top. Serve with tortillas, beans, sour cream and more cheese.

Ingredients
  1. 1/2 onion, sliced
  2. 1 bell pepper, sliced
  3. 400 gram tomatoes, chopped
  4. 1 red chilli
  5. 3 -4 eggs
  6. cheddar cheese
  7. 材料:
  8. 洋蔥(切絲) -1/2個
  9. 紅或綠甜椒(切條) -1個
  10. 蕃茄粒 -400克
  11. 雞蛋 -3 -4隻
  12. 車打芝士碎 -適量
