Ma Po Eggplants 麻婆茄子

Classic Sichuan dish – Ma Po Tofu, is many people’s favourite. Spicy chilli sauce with tofu and minced pork. This time I  make a little twist of the dish, use eggplants instead of tofu, very delicious!

Who doesn’t like Ma Po Tofu? One of my favourite Chinese homey dish, when I can’t think of anything for dinner, I love to cook this. Just serve with a big bowl of plain rice, simple , comforting and sooo delicious.

Here in where I live, I can’t find a place sell fresh tofu but only tofu in box. So I decide to use something else, cause Ma Po sauce will go well with everything anyway, and it does. 

Ma Po Eggplants

麻婆豆腐都是經常吃的家常菜,這次將豆腐改作茄子,也同樣好吃!香辣的醬汁加茄子豬肉,超開胃又下飯。 

15分鐘上桌,新手也容易做到,一定多吃碗白飯~

Ma Po Eggplants

Add oil in hot pan, cook the eggplants for few minutes and set aside. You have to add more oil or even fry it, this can keep the eggplants with lovely purple color. 

先將茄子切小塊,然後在鑊內下油(下多一點),炒茄子將2-3分鐘,盛起備用。也可將茄子直接放入油鑊炸一分鐘。*這步驟可令茄子顏色保持紫色,也可省略此步驟。

Add little oil in a wok, cook the pork then set aside. Add the chilli sauce, minced garlic and ginger in the wok, cook for  30 seconds.Ma Po Eggplants

熱鑊下油,炒豬肉至變色,盛起備用。在同一個鍋,下少許油,下豆瓣醬,炒半分鐘,然後下蒜末,薑末。

Then add all the seasoning, bring it to a boil. Add minced pork and mix together. Finally add the eggplants, cook until it softened, You can add some cornstarch with little bit of water to thicken the sauce if needed.

下所有醬汁 調味料 ,用中火煮沸。然後下免治豬肉,最後下茄子,煮至茄子變軟,最後可加粟粉水,令醬汁更濃稠即成~

Ingredients
  1. 2 eggplants, chopped
  2. 150 gram minced pork
  3. 1 teaspoon garlic, minced
  4. 1 teaspoon ginger, minced
For the Seasoning
  1. 2 tablespoons chilli bean sauce
  2. 1 tablespoon soy sauce
  3. 1 teaspoon sugar
  4. 150 ml chicken stock
  5. 材料:
  6. 茄子 -2條
  7. 免治豬肉 -150克
  8. 蒜蓉 -1茶匙
  9. 薑蓉 - 1茶匙
  10. 調味料:
  11. 豆瓣醬 -2湯匙
  12. 生抽 -1湯匙
  13. 雞湯 -150毫升
  14. 糖 -1茶匙
Instructions
