Orange Soufflé 香橙梳孚厘

Classic French dessert – Soufflé, with a hint of orange flavour. It looks so adorable with an orange as a bowl. 

Soufflé  is always a challenging dessert to make, but so nice to look at. It makes me so happy to see it grow so high in the oven. Even it will shrink when it comes out, but, it worth it.

This soufflé with refreshing and sweet orange flavour, perfect for summer and surprise your loved one!

梳孚厘升高的時間很短,所以必定要在享用前做,然後趁熱享用!

Cut the top 1/3 of the orange, take out the meat from the orange. Place the oranges on lined baking sheet.

Separate egg whites and yolks, beat the egg whites and add in 40 gram sugar until stiff peak.

In another bowl, beat the egg yolks and 40 gram sugar, beat for about 3 minutes till the batter is pale.

Add meringue into the batter, fold it gently. Then add in orange juice and flour, mix well.

Pour the batter into the oranges, pop in preheated oven at 190C, bake for 20 minutes. Sprinkle with icing sugar and serve immediately. 

將香橙的頂部切開,然後將果肉拿出,放在鋪有烘焙紙的焗盤上備用 (*如底部不平,可將底部切平)

將蛋黃和蛋白分開,用電動打蛋器以中速打發蛋白,當有泡沫出現時,下40克糖,再用高速打至乾性發泡 (將碗倒轉而蛋白不掉下)

在另一碗內,再用電動打蛋器打發蛋黃和40克糖,打約三分鐘至蛋糊淡黃色,拿起打蛋器時蛋糊可畫成8字。

將蛋白霜分三次加入蛋黃糊內,再加入橙汁和麵粉,輕力拌勻。

將蛋糊倒入橙內,倒至頂部,放入已預熱190度焗爐,焗約20分鐘。(*期間千萬不要打開焗爐,否則梳孚厘不會升高)再灑上糖粉即成!

  2. 30 ml orange juice
  3. 2 eggs
  4. 80 gram sugar
  5. 2 tablespoons plain flour
