Osmanthus Water Chestnuts Sweet Soup 桂花馬蹄露

This is classic Chinese sweet soup dessert. We love to make sweet soup, red beans, green beans , bean curd skin, papaya, pear….just put in boil water, add some sugar then have a large pot of sweet soup. It is great to have it warm in winter or cold in summer. The older people consider sweet soup is very healthy, for me, I just know is very delicious. 

Osmanthus Water Chestnuts Sweet Soup

This one is one of my favourite with water chestnuts, great drink in summer! The texture of water chestnut is very crunchy, and with osmanthus flavour, so light and delicious. Very easy to make, takes only 30 minutes and you will have a large pot. More economical to have it in dessert shop, of course, with better and more water chestnuts.

Osmanthus Water Chestnuts Sweet Soup

Wash and peel the water chestnuts, cut into small pieces. Put in plastic bag, use the back of the knife or rolling pin to smash it. Bring 1200ml water to boil, add osmanthus and sugar, until sugar dissolved. Then add water chestnuts, cook on medium heat for 5 to 8 minutes.

Use water mix with water chestnut flour, stir in little by little, keep stirring. The soup will get thickened, add until to your likeness. Bring it to boil, then remove from heat. Add in beaten eggs, use chopsticks keep stirring to make egg swirls. Serve warm or cold.Osmanthus Water Chestnuts Sweet Soup將馬蹄洗淨,去皮,切小塊。放入膠袋內,用木棒或刀背拍碎馬蹄成蓉。煮滾1200毫升水,然後下冰糖及桂花,煮至糖溶化後,再加入馬蹄蓉,用中火煮5 – 8分鐘。

用水與馬蹄粉拌勻,逐少加入糖水內,不停攪拌,糖水會變濃稠。再煲滾,然後離火。加入已打發蛋液,用筷子攪拌成蛋花。冷熱享用均可。

Ingredients
  1. 150 gram water chestnuts
  2. 80 -100 gram rock sugar
  3. 1200 ml water
  4. 2 tablespoons osmanthus
  5. 3 tablespoons water chestnut flour
  6. 2 eggs, lightly beaten
  7. 材料:
  8. 馬碲 -150克
  9. 冰糖 -80-100克
  10. 水-1200毫升
  11. 桂花 -2湯匙
  12. 馬蹄粉 -3湯匙
  13. 雞蛋 -2隻
