Pickled Cucumbers & Carrots 醃酸辣青瓜紅蘿蔔

Classic Chinese pickled cucumbers and carrots, great appetizer and snack. It takes no time to make and it is perfect to store in fridge in summer!

In summer, we all need some refreshing, appetizing and cold snack. This pickled veggi is perfect, sour, spicy and cold, with very crunchy cucumber and carrots. They are all veggi, so it is healthy!!! YAY!

I like to make it and put in the fridge, so whenever I need some snack or appetizer for my Chinese dinner, it is perfect! You can make it in 15 minutes without using your stove!!!

炎炎夏日,悶悶的沒有胃口,做這個涼拌小吃就最好!簡單的將青瓜,紅蘿蔔,也可加入白蘿蔔,浸在調味料內,放入雪櫃數小時後便可享用。香脆可口,冰冰涼涼,酸甜開胃。作前菜或小食,正!

Pickled Cucumbers & Carrots

Cut the cucumbers and carrots into long strips (finger-length), put them in a glass bowl and  mix with two teaspoons of salt. Let it rest for 15 minutes, it helps to release the water and make the veggi more crunchy. Drain well and dry with kitchen towel.

Add all the seasoning and mix well, cover and chill in fridge for 15 minutes. You can add some sesame oil before serving.2016-07-14_09.27.28

將青瓜,紅蘿蔔等切成大小相約的長條,放入玻璃碗內,下2茶匙鹽,拌勻,靜置15分鐘(這可令水分排出,令青瓜,紅蘿蔔更香脆)。用篩隔出排出的水份,再用廚紙吸乾水份。

將青瓜,紅蘿蔔和所有調味料放入大碗內,拌勻 (可自行加減 調味料 份量)放入雪櫃約三個小時後便可享用。享用時可加點麻油,就更美味呢!

Ingredients
  1. 1 cucumber
  2. 3 carrots
  3. 180 ml vinegar
  4. 15 gram sugar
  5. 1 star anise
  6. 1 -2 red chilli
  7. 材料:
  8. 紅蘿蔔 -3條
  9. 青瓜 -1條
  10. 調味料:
  11. 白醋 -180毫升
  12. 糖 -15克
  13. 八角 -1個
  14. 紅辣椒 (可省略) - 1-2隻
Instructions
