Sachima 黃金薩琪瑪

Sachima is a very popular Chinese pastry, it made of fried strands of batter and stick together with syrup. People like to eat this also in Chinese New Year, they are crispy, sweet and delicious!

I can’t believe actually it is very easy to make Sachima by yourself. You can add some ingredients like raisins, walnuts, peanuts, dried cranberries….They are so yummy and good gift idea for Chinese New Year too!

小時候經常吃的小食薩琪瑪,又稱“馬仔”,是滿洲族的甜點。

原來也可在家輕鬆做到!充滿蛋香,金黃酥脆的,甜甜的,簡單又美味!農曆新年做給親戚朋友也不錯喔!

Mix flour, baking powder and eggs together to form a dough. If the dough is too wet, add some flour; if too dry, add some water. Knead the dough for 5 minutes or until the surface is smooth. Wrap it with cling film and let it set for half an hour.

Roll the dough about 2mm thick, then cut it into thin strips. Sprinkle some flour to prevent it to stick.

Fry the dough strips to golden, set aside.

For the syrup, add sugar, maltose and water in a wok, cook under medium heat until bubbles formed. (Do not stir it) When there are bubbles, turn to medium low heat and continue to cook the syrup. Cook until the syrup is thickened. 

Add in fried pastry and white sesame, mix well. Put in lined baking tray, press hard. Let it cool and cut into small pieces. 

先將麵粉、泡打粉和雞蛋拌勻成麵糰,如麵糰太濕,多加點麵粉;如太乾,加點水。用手搓麵糰約5分鐘,至麵糰表面光滑,用保鮮紙將麵糰包好,靜置半小時。

將麵糰擀成薄片(約2毫米厚),然後切成幼條,要灑點麵粉令麵條不要黏在一起。

將麵條放入熱油鍋炸至金黃色,撈起備用。

糖漿做法: 將砂糖、麥芽糖和水放入大鍋內,用中火煮至有泡沫(其間不要攪拌)當有泡沫出現時,可以開始攪拌糖漿,轉中小火繼續煮糖漿,煮至糖漿可以撈出絲便可。

將麵條和芝麻倒入鍋內,快速拌勻。然後倒入鋪有烘焙紙的容器內,大力壓實,待涼後用鋒利的刀切件。

Ingredients
  1. 150 gram bread flour
  2. 2 eggs
  3. 2.5 gram baking powder
  4. White Sesame Seeds
For the Syrup
  1. 90 gram sugar
  2. 100 gram maltose
  3. 50 ml water
  4. 材料:

  6. 雞蛋 2個
  7. 泡打粉 2.5克
  8. 白芝麻 適量
糖漿
  1. 砂糖 90克
  2. 麥芽糖 100克
  3. 水 50毫升
