Sour & Spicy Rice Noodles 酸辣米線

Every time when I back to Hong Kong, I must have this noodles…many times! They are spicy, sour and SUPER delicious! 

For the soup noodles, of course is all about the soup. When you make the soup right, even with just noodles, it can be heaven! I can’t believe how easy and simple to make. In 15 minutes, you can have a big bowl of warm, yummy noodles.

每次回香港,我都必定要吃米線,加勁多配料,超好味!
已經有好幾個月沒有吃,突然在這裡的中國超市看到乾米線,立刻買來試試。。。果然不錯,超開心!
 
酸辣米線最重要當然是湯底,酸辣度可自由加減,開胃又好味!當然再加勁多的配料,就跟香港吃的一樣囉 ~15分鐘就做到,我要每星期都吃一次,哈哈!
 
 
Cook the rice noodles according to the package instruction. Then rinse it under water for 15 minutes and drain well. Put the noodles in a bowl.
 
Marinate the minced pork with some soy sauce, sugar and salt for 15 minutes. 
 
Add oil in hot pan, cook the minced pork for a minute and then add in spicy bean sauce. Add in chicken stock and all seasoning, bring it to boil and let it simmer for 5 minutes. 
 
Cook all the food you wanna eat with noodles (fish balls, dumplings, vegetable etc) . Add it in the bowl, pour the soup and sprinkle with some spring onions. Enjoy!
 
 
先煮熟米線,再用開水沖一沖,瀝乾水份,放入碗內備用。
 
用少許醬油、糖和鹽醃免治豬肉15分鐘。燒熱鑊後下油,炒豬肉,然後再下辣豆瓣醬,炒一炒。
 
加入酸菜、雞湯和所有調味料,煮沸後轉小火煮再煮5分鐘。再煮熟其他配料(水餃、魚蛋、金菇等),放入碗內,再倒入湯,灑上蔥花即成!

Ingredients
  1. 2 portions rice noodles
  2. 150 gram pork, minced
  3. pickled mustard green
  4. 500 ml chicken stock
Seasoning
  1. 1 tablespoon soy sauce
  2. 1 teaspoon dark soy sauce
  3. 2 tablespoons vinegar
  4. 2 tablespoons spicy bean sauce
  5. sesame oil
  6. 材料:
  7. 米線 2人份
  8. 免治豬肉 150克
  9. 酸菜 適量
  10. 雞湯 500毫升
  11. 調味料:
  12. 生抽 1湯匙
  13. 老抽 1茶匙
  14. 白醋 2湯匙
  15. 麻油 少許
  16. 辣豆瓣醬 2湯匙
