Stir-Fried Bitter Melon with Eggs 苦瓜炒蛋

Classic Okinawa, Japan dish with bitter melon and fried eggs. Simple, healthy and delicious. The bitterness does taste good and refreshing, classic homey dish in no time.

Many people don’t like bitter melon because of the bitterness, but actually when you eat more, the bitterness is kind of refreshing. Simply add some luncheon meat (that is how they cook in Okinawa) and with stir-fried eggs, perfect to serve with plain rice.

在沖澠吃過苦瓜炒蛋後,便嘗試在家煮。還加了午餐肉碎一起炒,味道更好!

一道簡單又快捷的家常菜就完成,很下飯呢~

Cook the bitter melon in boiling water for 8-10 mins, season with salt then drain well.

Add oil in hot pan, cook the minced meat, then add in bitter melon, cook until soften. 

Add in beaten eggs, stir-fry for 30 seconds, then it is done!

先將涼瓜放入沸水內煮8至10分鐘,下鹽調味,瀝乾水份備用。.

燒熱鑊後下油,先炒肉碎,然後下苦瓜炒至軟身。再下雞蛋,炒一炒即成!

  1. 2 bitter melon
  2. 100 gram pork, minced
  3. 3 eggs
  4. 材料:

  6. 肉碎 100克
  7. 雞蛋 3隻
Instructions
