Yangzhou fried rice 揚州炒飯 is a classic Chinese-style fried rice, with eggs, shrimps, BBQ pork etc. With simple seasoning and you can have big bowl of comforting fried rice in 15 minutes!

Yangzhou fried rice actually is not from Yangzhou?! It is a Guangzhou-style fried rice, then being popular in Hong Kong. So you can always find Yangzhou fried rice in Hong Kong’s restaurants and Cha Chann Tang.

The perfect fried rice should be very dry, every rice not stick together and the rice wrapped with eggs. With simple seasoning, it takes only 15 minutes to cook and you will have SOOOOO MUCH better than takeaway fried rice, I promise!

突然很想吃炒飯,人在異鄉,要吃好的炒飯就要靠自己煮,外賣的多是很多油而配料又少!

揚州炒飯並不是來自揚州,而是廣州的炒飯,在香港發揚,在茶樓和茶餐廳其中必點的炒飯!

簡單的材料,金黃彈牙的炒飯,15分鐘搞定!

Use some salt and pepper marinate the shrimps. Heat oil in hot wok, cook the shrimps and then set aside.

灑少許鹽及胡椒粉在蝦上,燒熱鍋後下油,先炒蝦,然後盛起備用。

Add little bit more oil, add the eggs and cook for few seconds, then add rice. Stir-fry for about 2 minutes.

再下少許油,下雞蛋,炒幾秒至蛋半熟,然後下飯,炒兩分鐘。

Add in shrimps, BBQ porks (Char Siu) and spring onions and green peas, season with salt, white pepper and some soy sauce. Cook for about a minutes and it is done!

再下蔥花,青豆,蝦,叉燒和調味料 (鹽,白胡椒粉,生抽),再炒一分鐘即成!(我用了午餐肉)

Ingredients
  1. 2-3 bowls rice
  2. 150 gram shrimps
  3. 200 gram BBQ pork (Char Siu), cubbed
  4. 2 eggs, beaten
  5. green peas
  6. 2 spring onions, chopped
  7. 材料:
  8. 白飯 -2 -3碗
  9. 鮮蝦 -150克
  10. 叉燒 -200克
  11. 雞蛋 -2隻
  12. 青豆 -適量
  13. 蔥花 -適量
Instructions
