Healthy Vegetable Hot & Sour Soup 蔬菜酸辣湯

It is summer and I seldom eat rice and noodles now, I love to drink soup at night time and it is less heavy and healthy. Lately I always make this hot and sour soup, they are spicy, sour, full of vegetable and super delicious! 

You can add any vegetable you desire and they are low carbs and healthy. Definitely bring you back the appetite during the hot summer time. Hope you like it too!

近來夏天沒有胃口,晚上我都喜歡不吃飯,只喝湯。這個是非常美味的蔬菜酸辣湯。一大鍋,有不同的蔬菜,豆腐、紅蘿蔔、磨菇等。酸辣開胃,低卡健康又好味!

簡單易做,煮一大煲,超滿足!

Cut all the ingredients into thin slices, add oil in hot pot, then cook the black fungus, mushrooms and carrot. 

Then add in all seasoning and chicken stock, bring it to boil then cook it simmer for 15 minutes. 

Add in enoki mushroom and tofu, cook for 5 minutes. Then add in some corn starch + water, thicken the soup. Turn off the heat, add in beaten egg, then stir it. Enjoy!

將所有材料切幼絲,燒熱鍋後下油,炒一炒木耳、磨菇、紅蘿蔔. 

然後下所有調味料和雞湯,煮沸後,轉小火煮15分鐘. 

加入金菇和豆腐,煮5分鐘。再加點生粉+水,令湯更濃稠。關火,然後下蛋液,再拌勻成蛋花即成!
