One-Pot Indian Curry Chicken 超簡單印度咖喱雞

This is a very easy, simple Indian curry recipe. What you need is one-pot and you will have a big comfort pan of curry chicken.

Whenever come to Indian dishes, you must think of so many spices. It is not easy to find in your kitchen cabinet, nor it is a waste to buy tons of it when you don’t always use it. So this recipe is for you! You don’t need all kind of Indian spices to cook it, if you are not a fan of spiciness, this recipe go with coconut milk and yogurt , which make it not spicy but creamy and very moist chicken. Add oil in hot pan, cook onion until softened, then add in curry powder, chilli powder, cinnamon powder and bay leaf, cook for a minute. If is too dry, add more oil.

Add in yogurt, coconut cream and tomato paste, mix well.

Add in chicken, cook under medium heat, bring it to boil. Then turn to simmer for 25 minutes. Season with salt and sugar, enjoy!

燒熱鑊後下油,先炒洋蔥至軟身,然後下咖喱粉、辣椒粉、肉桂粉和月桂葉炒一分鐘(*如太乾,可多加點油)

然後下乳酪、椰漿和蕃茄膏,拌勻

再加入雞肉,用中火煮沸後,轉小火煮25分鐘,最後加鹽和糖調味即成! (期間不時攪一攪醬汁和反一反雞肉)

Ingredients
  • 800 g chicken
  • 1 onion, chopped
  • 2 tsp garlic, minced
  • 2 tsp ginger, minced
  • 200 ml coconut cream
  • 240 ml yogurt
  • 3 tbsp tomato paste
  • 3 tbsp curry powder
  • 1 tsp chilli powder
  • 1/2 tsp cinnamon powder
  • 2 bay leaves
