Rice Cooker Orange Cake 電飯煲焗香橙蛋糕

If you don’t have oven at home, you can steam cake or even use rice cooker. Personally I prefer rice cooker cake to steam cake, the texture from rice cooker is quite similar as the one we bake in oven.

This time I make orange flavour cake, plus very delicious orange flavour icing. Well, everything look and taste better with icing right? 🙂 The important part to making this cake is to beat the egg whites and yolks really well, beat the air into the cake and make it light and fluffy without baking powder. It is very easy to make and I love it so much, hope you do too! Enjoy!

如果家裡沒有焗爐,用電飯煲也可以簡單做蛋糕。這個非常鬆軟香橙子味蛋糕,充滿蛋香,加入橙汁,清新不膩,味道極像小時候吃的嘉頓香橙雪芳蛋糕,超好味!

再在上面加一層香橙味的糖霜,加點簡單的裝飾,令蛋糕味道升級又更吸睛。這次用分蛋法,分別將蛋白和蛋黃打發,打入空氣,令蛋糕非常鬆軟而又不用泡打粉。新手都必定做到,快試試!

Beat the egg whites until foamy, then add in sugar. Continue beating until stiff peak formed. When you turn the bowl upside down, the meringue will not drop.

Then beat the egg yolks with sugar, until ribbon stage (that you draw the ribbon and the batter can hold for few seconds)

Add 1/3 meringue into egg yolk batter, mix well. Then add the egg yolk batter into the meringue. Fold it gently.

Then add in melted butter, orange juice and milk, mix well. Sift in flour and orange zest, fold it gently until well-combined.

Brush some oil or melted butter into rice cooker, pour in batter, tap on the counter few times to release air bubbles. Then turn on the rice cooker and ”cook” for about 50minutes to one hour, or until the cake is fully cooked. You can use a toothpick to check and see if it comes out clean.

For the icing, mix the the icing with 1 tablespoon of orange juice, if it is still too thick, add little bit more water, until the consistency that you desire.

Let the cake cool completely, then pour in icing, I use some orange zest on top for decoration. Enjoy!

*my pan is 8-inch

*you can also swap the orange juice to lemon juice

*you can also bake in oven at 180C, bake for about 45 to 50 minutes, or until the cake fully cooked.

用電動打蛋器打發蛋白,有氣泡時更入糖,打發至堅挺。將碗倒轉而蛋白霜沒有掉下就可以

用電筋打蛋器打發蛋黃和糖,打發至有紋路

將1/3蛋白霜加入蛋黃糊內,拌勻,然後將蛋黃糊倒入蛋白霜內,輕力拌勻

然後加入溶化牛油、橙汁和牛奶,拌勻. 再篩入麵粉和橙皮屑,輕力拌勻至沒有粉粒

在內鍋內塗一層牛油或油,然後倒入蛋糕糊,震動數下排出氣泡,然後放入電飯煲內”煮”約50分鐘至一個小時。插入牙纖,抽出而沒有蛋糕糊黏著便可

糖霜做法:約糖粉和一湯匙橙汁拌勻,然後逐少加入清水,不要一次下全部清水,如質感濃稠便可

讓蛋糕完全待涼後,倒上糖霜即成!

*各電飯煲火力不同,要注意”煮”的時間
*可將橙汁改成檸檬汁
*我的電飯煲是8吋
*也可以放入180度C焗爐,焗約40-50分鐘或至蛋糕全熟
