Golden Egg Fried Rice 黃金蛋炒飯
Classic Chinese egg fried rice that everyone can easily cook at home. To master it, with cooking every rice coat with egg, super delicious. Perfect for week night dinner, better than takeaway!
So every Chinese family has their own recipe of fried rice, or actually there is not necessary need a recipe for fried rice. As long as you have rice, then you can add whatever you have on hands. This is the best way to clear your fridge and feed the whole family, simple, quick and delicious!
For the good fried rice, the rice has to be dry and not stick together, every rice has to coat with eggs. Of course there are some tricks to make the best fried rice, first, use the overnight cooked rice which contain less mositure. Second, soak the rice into the egg yolk and make sure no rice stick together and every rice coated with egg yolk. Third, fry the rice when the oil is very hot and stir-fry quickly at high heat.
There you go, the best fried rice is ready! So much better than takeaway shop, I promise!
Wash and chop all the ingredients into small pieces. Mix the overnight cooked rice with the egg yolks, separate the rice if it stick together.
- 2 bowls rice
- 2 eggs
- 1/4 onion, chopped
- 1/4 cabbage, shredded
- 80 gram ham, sliced
- 4 crab sticks, chopped
- corns and green peas
- 白飯 -2碗
- 雞蛋 -2隻
- 洋蔥 -1/4個
- 椰菜 -1/4個
- 火腿 -80克
- 蟹柳 -4條
- 青豆 -適量
- 粟米粒 -適量
- Wash and chop all the ingredients into small pieces. Mix the overnight cooked rice with the egg yolks, separate the rice if it stick together.
- Heat oil on high heat, cook the onion for a minute until soft. Then add rice and stir fry it quickly on high heat for two minutes.
- Add the ham, crab stick and cook for a minute. Then add vegetables, season with salt, white pepper and chicken powder. Stir for one minute, then add the egg white and mix well, then it is done!
