Golden Egg Fried Rice 黃金蛋炒飯

So every Chinese family has their own recipe of fried rice, or actually there is not necessary need a recipe for fried rice. As long as you have rice, then you can add whatever you have on hands. This is the best way to clear your fridge and feed the whole family, simple, quick and delicious!

For the good fried rice, the rice has to be dry and not stick together, every rice has to coat with eggs. Of course there are some tricks to make the best fried rice, first, use the overnight cooked rice which contain less mositure. Second, soak the rice into the egg yolk and make sure no rice stick together and every rice coated with egg yolk. Third, fry the rice when the oil is very hot and stir-fry quickly at high heat.

There you go, the best fried rice is ready! So much better than takeaway shop, I promise!

經典的黃金炒飯,做法簡單,加什麼材料都可,是清理雪櫃的最好方法,美味又滿足!

要炒到每粒米都金黃色,粒粒分明,其實做法不難,只要記住小秘訣便輕鬆做到囉!

要用隔夜的飯,水份較少,不容易黏成一團。將飯先與蛋黃拌勻,用足夠的油,用大火快炒,不要用鑊剷壓飯,不停炒便可!快試試喔!

Wash and chop all the ingredients into small pieces. Mix the overnight cooked rice with the egg yolks, separate the rice if it stick together.

將所有材料洗淨,切小塊。將蛋黃及蛋白分開,將蛋黃與白飯拌勻,用手將飯分開,不要黏成一團。

Heat oil on high heat, cook the onion for a minute until soft. Then add rice and stir fry it quickly on high heat for two minutes.Golden Egg Fried Rice

熱鑊後下油,先炒洋蔥一分鐘,然後下飯,快炒兩分鐘。盡量將飯分散,但不要壓飯。再下火腿及蟹柳快炒一分鐘,然後加蔬菜, 鹽,白胡椒粉及雞粉調味,炒至蔬菜軟身。最後下蛋白,拌勻即成!

Ingredients
  1. 2 bowls rice
  2. 2 eggs
  3. 1/4 onion, chopped
  4. 1/4 cabbage, shredded
  5. 80 gram ham, sliced
  6. 4 crab sticks, chopped
  7. corns and green peas
  8. 材料:
  9. 白飯 -2碗
  10. 雞蛋 -2隻
  11. 洋蔥 -1/4個
  12. 椰菜 -1/4個
  13. 火腿 -80克
  14. 蟹柳 -4條
  15. 青豆 -適量
  16. 粟米粒 -適量
