Raisin Danish Bread Stick 提子丹麥條

I want to make all the traditional Hong Kong bakery’s style bread! HAHA. This time is the Raisin Danish Bread Stick, it is called Danish, but is not the western Danish pastry that we have in mind. It is classic Hong Kong style bread with raisin.

They are long bread stick, shiny, simple and delicious. Very easy to make, once you make the bread dough, you can use the same dough to make sausage roll, pineapple bun etc. Enjoy!

這個丹麥條是傳統港式麵包店的麵包,雖說是丹麥,但不是丹麥酥,是普通的港式麵包加入葡萄乾。小時候非常喜歡吃這個做早餐,充滿回憶。做法簡單,麵包體鬆軟好味,大家又試試!

Mix the instant dried yeast, sugar and water together, let it rest for 15 minutes.

In a large bowl, mix flour, salt, yeast mixture together. Then add in butter and 80ml water, mix well.

Knead the dough for at least 10 minutes or until the dough is smooth and elastic. Place the dough in lightly oiled bowl, cover in cling film and let it rest for at least an hour, or until double its size.

Take out the dough, press the dough to release the air. Roll the dough, brush the butter on half of the dough, then add raisins on top. Fold it, then roll again.

Cut into 4 or 6 long strips, then twist it. Cover with cling film and let it rest for an hour. Brush some beaten egg on top, then pop in preheated oven at 180C, bake for about 15 to 18 minutes. Take it out and brush some apricot jam or honey on top to give it some shine. Enjoy!

*This recipe can make 4 big or 6 small bread sticks

將快速乾酵母、糖和水拌勻,靜置15分鐘

在大碗內加入麵粉、鹽、酵母液,拌勻,再下室溫牛油和80毫升牛奶,拌勻

用機器或手搓麵糰,搓至有薄膜和表面光滑。將麵糰放入塗有油的大碗內,用保鮮紙封口,靜置一個小時或至麵糰脹大一倍(*如天氣冷,要長一點時間)

拿出麵糰,排出空氣,然後擀平,在一半麵糰上塗上溶化牛油,再加上葡萄乾,對摺,再擀平

然後分成4或6份,做型成辮子,蓋上保鮮紙,靜置一小時。在麵糰上塗上蛋液,放入已預熱180度C焗爐,焗約15至18分鐘,拿出後,塗上杏桃果醬或蜂蜜即成!
