Super Easy Caramel Popcorn 超簡單焦糖爆谷
Seriously, popcorn is one of the best, easy to make, cheap and low calories ( if just add salt) snack on earth. When you see the fancy, delicious popcorn that sell in store, yes they might look fancy but also very expensive. You can easily make it at home instead, is slightly healthier, so much cheaper and can adjust the sugar according to your taste.
This is my favourite recipe, to add little bit baking soda at the end, make the caramel a little bit honeycomb flavour, and why not?! It is perfect for party, decorating cake or snack for movie night. Enjoy!

Mango season is here! It is perfect time to make some mango dessert! This is super easy to make mango pudding dessert, add some yogurt to make it healthier (of course!) and creamier.

Earl Grey Creme Brûlée 法式伯爵茶焦糖燉蛋
A fancy French dessert that many people love – Creme Brûlée, to crack the caramel on top is the best of this dessert for me, haha! But of course, the creamy, smooth custard is so yummy too!
This dessert is super easy to make, the best thing is, you can make ahead the day before and you can serve when your guests come. The best part is to use the blow torch to caramelise the sugar, but if you don’t have a blow torch, you can just put the pudding at the top shelve of the oven, closer to the grill and you can still make the delicious caramel. Classic Victoria Sponge Cake 維多利亞海綿蛋糕
Nothing more classic than this Victoria Sponge cake / Victoria sandwich. It said Queen Victoria have this cake every afternoon, that’s why this cake name after her. British people like jam and cream so much, but it is actually very delicious when sandwich with cake or scone. That make these two British classic.
I always love to make this cake, it is super easy to make, all the ingredients are just the same ratio, recipe already in my head. Even you are new to baking, I am sure you can make this cake too. Sandwich with cream and jam, it is perfect for afternoon tea and wow your guests.
No-Knead Raisin & Walnut Bread 免搓提子合桃麵包
So…the topic of ”no-knead” bread is very attractive right?! 😉 Yes, you don’t need a bread machine, you don’t need to knead bread and you will still have a very super tasty bread!
Simply mix the dough together, then let it rest for 12 hours or more, let it rise slowly. The trick is to bake in a dutch oven, trap the air and make it like a steam method. Then you will have a very crispy crust and soft bread inside. With the raisins and walnuts give the sweetness and chewiness. It is a perfect bread! Serve with butter, Enjoy!
Coconut Mochi Cake 椰汁麻糬小蛋糕
So lately many people obsessed with mochi, like Japanese mochi filled with red bean paste and strawberry, the Hong Kong style mochi filled with mango, peanut or red bean paste. They are so chewy and super delicious!
Actually mochi is very easy to make, you can buy the glutinous rice flour in grocery shop and you can have the mochi snack you crave for. This time, I make the coconut mochi cake originally from Hawaii. With the coconut flavour, sooooo chewy and delicious. I made it with mini muffin tin, that make it bite size, or you can make in cake sheet pan, then cut into small pieces. Try and hope you love it too!
Minced Ginger & Scallion Dipping Sauce 薑蔥蓉沾醬
Every time when I back to Hong Kong, I must have steamed chicken and Char Sui (PPQ Pork). However, what make me excited is not about the chicken, but the dipping sauce. It is a very simple sauce with minced ginger, scallion and oil. It is soooooo delicious, once you try it, you will love it.
Mr P always ask me to make this sauce, even in UK, we don’t have the ”yellow skin” chicken but this sauce go with roasted chicken. And also perfect just with plain rice.
