Kimchi Macaroni and Cheese 泡菜芝士通心粉

I don’t think many people can resist a bowl of DELICIOUS , CHEESY and CREAMY macaroni and cheese. It is just the best comfort food that everyone needs after a long day! 

So to make this macaroni and cheese more evil, I add kimchi in it. Yes, Korean kimchi with mac and cheese, it sounds weird but it is insanely delicious! I have a tendency to add kimchi in food, fried rice, spaghetti, noodles…and they are so good. This time, it is the best! with the creamy cheese sauce, sour and spicy kimchi…it is just heavenly. I can’t tell you how until you try it! 

我是超級泡菜迷,非常喜歡煮什麼都加點泡菜,泡菜炒飯、意粉、湯、炒麵。。。怎樣配都很美味!但這個非常邪惡的泡菜芝士通心粉Mac n Cheese ,我覺得是最最最好味,完全不能抵擋!

Cook the macaroni and drain well. Pan-fry the bacons and cut into small pieces.

Add oil in hot pan, cook the kimchi for a minute, then add in bacon. Add in flour to cook for a minute, then gradually add in milk, stir well. Bring it to boil under medium heat, then turn to low heat and cook for 5 minutes. Season with salt, chicken powder and black pepper. 

Add in cheese, cook until cheese are all melted. Add in macaroni , mix well. You can enjoy as it is! 

Add the macaroni into a baking tin, sprinkle cheese and bread crumbs on top. Pop in preheated oven at 180C, bake for 15 minutes or until cheese are melted and golden. Enjoy!

先將通心粉煮熟,然後澀乾水份備用。煎香煙肉,再切成小塊備用。

燒熱鑊後下少許油,炒泡菜一分鐘,然後下煙肉,再炒一炒。下麵粉後炒一分鐘,然後逐少加入牛奶,用中火煮沸後轉小火再煮五分鐘,下鹽、雞粉和黑胡椒調味。

再下芝士碎,煮至芝士溶化。加入通心粉,拌勻。將通心粉倒入容器內,再灑上芝士碎和麵包糠,放入已預熱180度C焗爐,焗約15分鐘或至芝士溶化即成!

  • 200 g macaroni
  • 250 g kimchi
  • bacon
  • 250 ml milk
  • 15 g flour
  • 250 g cheese (cheddar & parmesan)
  • bread crumbs
材料
  • 200 通心粉
  • 250 泡菜
  • 數片 煙肉
  • 250 毫升 牛奶
  • 15 中筋麵粉
  • 250 芝士碎(車打芝士+Parmesan 芝士)
  • 適量 麵包糠
