Ingredients
  • 1 egg
  • 120 ml vegetable oil
  • 80 ml milk
  • 30 ml lemon juice
  • 120 g sugar
  • 100 g yogurt
  • 150 g all-purpose flour
  • 5 g baking powder
  • 1/4 tsp salt
  • 130 g blueberries

Instructions
  1. Mix egg, vegetable oil and milk together, then add in sugar, mix well.

  2. Add in yogurt, then sift in flour, salt and baking powder. Mix until well-combined. *Do not over mix, just until smooth is ok) 

  3. Add in blueberries, mix well. Pour the batter into lined muffin tin, you can add some more blueberries on top and sprinkle with brown sugar. Pop in preheated oven at 180C, bake for about 25 minutes or until fully cooked. Enjoy!
