Ingredients
  • 200 g unsalted butter
  • 170 g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 200 g all-purpose flour
  • 2.5 g baking powder
  • 200 ml whipping cream
  • 20 g sugar (for whipping cream)
  • strawberry jam
Instructions
  1. Cream the butter and sugar until pale and fluffy. Add in vanilla extract and eggs, beat until well combined.

  2. Sive in flour and baking powder, mix well but not over mix it.

  3. Pour the batter evenly into two 20cm cake in. Pop in preheated oven at 180C, bake for about 20 minutes or fully cooked. If you use one cake tin, bake for 40-50 minutes or until the cake is fully cooked.

  4. For the filling: beat the cream, then add in sugar. Beat until firm peak.

  5. Let the cake cool completely on wire rack. Then spread strawberry jam on one cake, then the other put on whipped cream.

  6. Sandwich it, dust with icing sugar and enjoy!
