In a large bowl, mix flour, sugar and salt together. Then add in cold butter, mix it with your hands and crumble it.
Then form a dough, do not knead it. If the dough is too dry, add some water; too wet, add some flour. Wrap it with cling film and chill in fridge for 1 hour.
Mix the fruit with lemon juice, sugar and corn starch.
Sprinkle some flour on work top, roll the dough into round shape. Place fruit in the middle, then fold the edges.
Brush some egg wash on pastry, sprinkle with some sugar. Pop in preheated oven at 180C, bake for 35-40 minutes or until the pastry is golden and fruit is soften.
