Ingredients
For the Muffin
  • 300 g bread flour
  • 6 g instant dried yeast
  • 15 g sugar
  • 6 g salt
  • 50 ml water
  • 100 ml milk
  • 15 g butter
  • cornmeal, semoline or polenta for dusting
Sausage Patties
  • 500 g minced pork
  • 1 tsp garlic powder
  • 1/2 tsp ground sage
  • 1/2 tsp ground thyme
  • 1 tsp salt
  • 1/4 tsp black pepper
Others
  • 4 eggs
  • 4 slices cheese
Instructions
  1. Mix yeast , sugar and 50ml of water together, let it set for 15 minutes. There will be bubbles, means the yeast is active.

  2. Mix milk and egg together. Mix flour and salt together in a large bowl. Then add in yeast mixture, butter and milk-egg mixture, mix it together to form a dough.

  3. Place the dough on floured surface , knead the dough for about 10 minutes, or until the dough is smooth. Then put the dough in lightly oil bowl, cover in cling film. Let it rest for 1 to 1.5 hour, or until dough double its size. (If the dough is too wet, add some flour; too dry, add some water)

  4. Take out the dough, press it and release air. Divide into 6 pieces, roll into balls. Place it on baking tray (dust with cornmeal). Cover with cling film and let it rest for an hour.

  5. Place the dough a little bit, then cook it in pan under medium low heat. Cook for about 6 minutes each side. If you worry the muffins not cook enough, you can put in 180C oven, bake for 5 minutes.

  6. For the sausage patties: Mix the minced pork and seasoning together, divide into 4 portions. Place it into a mould, press it, the meat will shrink when cook, so make a slightly bigger one. Cook on a stovetop or bake in oven at 180C, for about 12-15 minutes (Depends how thick your patties are)

  7. For the Egg: Add oil in hot pan, add eggs in egg rings, cook for 3 minutes or until the eggs are cooked.

  8. Assemble: Cut the muffin into half, grill it for few minutes. Then place slice of cheese on the muffin, then sausage patties–> egg–> muffin. Enjoy!
