Cut the pumpkin into small pieces, steam it until soften. Then use a fork to mash it until puree like, set aside.
In a large bowl,mix with eggs and pumpkin puree together, then add in sugar, vegetable oil and vanilla extract.
Then add in ground cinnamon, ginger, cloves and mixed spice. Then add in baking powder, baking soda and plain flour. Mix it until well combined.
Pour the batter into lined loaf tin, sprinkle some pumpkin seeds on top. Pop in preheated oven at 180C, bake for 45-55 minutes or until is fully cooked. Enjoy!
