Ingredients
  • 120 g Pistachio 開心果
  • 3 Eggs 雞蛋
  • 125 ml Vegetable Oil 菜油
  • 60 ml Milk 牛奶
  • 80 g Yogurt 乳酪
  • 180 g Plain Flour 中筋麵粉
  • 210 g Sugar 糖
  • 1/2 tsp Baking Powder 泡打粉
  • 1/2 tsp Baking Soda 梳打粉
Lemon Icing 檸檬糖霜
  • 120 g Icing Sugar 糖霜
  • 1-2 tbsp Lemon Juice 檸檬汁
Instructions
  1. Blend the pistachio into very fine pieces. Set aside.

  2. In a large bowl, mix with eggs, oil, milk and yogurt together.

  3. Then sift in sugar, flour, baking powder, baking soda and pistachio. Mix until well combined.

  4. Pour the batter into lined loaf tin, pop in preheated oven at 180C, bake for 50-60minutes, or until fully cooked. Let it cool completely.

  5. For the lemon icing, mix icing sugar and lemon juice. Then pour on the cake, add more pistachio on top. Enjoy!
