
Blend the pistachio into very fine pieces. Set aside.
In a large bowl, mix with eggs, oil, milk and yogurt together.
Then sift in sugar, flour, baking powder, baking soda and pistachio. Mix until well combined.
Pour the batter into lined loaf tin, pop in preheated oven at 180C, bake for 50-60minutes, or until fully cooked. Let it cool completely.
For the lemon icing, mix icing sugar and lemon juice. Then pour on the cake, add more pistachio on top. Enjoy!
