Dried Fruit Tea Cake 紅茶水果乾蛋糕

During the quarantine, who is not baking? haha! I have been baking cake at least once a week and feeling good. I love this tea cake, I use strong black tea to make it, add in some lovely raisins and cranberries. They are so moist, full of favour and super delicious. Perfect with a cup of tea, my favourite tea time cake.

Super easy to make, no fuss and even if you are new to baking. Try and hope you love it!

疫情下,大家在家非常忙碌的焗蛋糕,連平常不烘焙的朋友也加入戰團,難怪這麼困難買麵粉囉!這次做紅茶水果乾蛋糕,充滿紅茶香,加入水果令蛋糕更濕潤鬆軟,超好味!再配一杯熱茶,最好的下午茶點!

這個是非常簡單的食譜,新手也做到,我用了提子乾和紅莓乾 Cranberries。希望你都鐘意!

Put 3 to 4 tea bags in 400ml boiling water, leave it for 10 minutes then take out the tea bags.

Pour the tea into saucepan, add in dried fruit. Cook under medium heat till boil, then simmer for 5 minutes. At this time, the dried fruit absorb most of the tea. Let it cool.

In a large bowl, mix flour, baking powder and sugar together. Then add in egg and cooled tea and fruit mixture. Mix until well combined.

*my loaf tin is 22 x 11.5cm

Pour the batter into lined loaf tin, pop in preheated oven at 170C, bake for about an hour. Check with toothpick to see if is come out clean.

將3至4個茶包放入400毫升沸水內,靜置10分鐘,拿出茶包

將茶放入煲內,再加水果乾,用中火煮沸,然後轉小火煮5分鐘,令水果乾吸收茶,待涼

在大碗內加入麵粉、泡打粉和糖,拌勻. 加入雞蛋和已待涼的茶+水果乾,拌勻

將蛋糕糊倒入鋪有烘焙紙的烤模內,加入已預熱170度C焗爐,焗約一小時,然後插入牙纖,抽出時如沒有沾著蛋糕糊,即成!(*如有沾著蛋糕糊,要繼續烤至蛋糕全熟。要自己觀察)

*我用的蛋糕模是22x 11.5cm
*可以用葡萄乾、蔓越莓乾Cranberry或其他果乾
