Earl Grey Panna Cotta 伯爵茶奶凍

A creamy, delicious and rich panna cotta is the easiest yet delicious dessert. Panna cotta in Italian means cooked cream, literally just cook the cream and set with gelatine. 

The variations of panna cotta are endless, this time I make the earl grey flavour. It is not too sweet with hint of earl grey flavour. On top of it, is earl grey jelly to balance the flavour. Try and hope you love it!

這個絕對是零難度的義大利甜點-Panna Cotta, 意思是”煮過的鮮奶油”。就真的是煮鮮奶油,加入魚膠粉凝固即成,超超超簡單!

這次做了伯爵茶口味,淡淡的茶香,Creamy 香濃幼滑的奶凍,加點裝飾就成美味的甜點囉!

Cook the cream in a pot under medium low heat until there is bubbles around. Then add in sugar, mix well until dissolved. Remove from heat. 

Add the tea bags in cooked cream, let it set for 10 minutes.

Mix  30ml water with gelatine together, then put in a bowl of hot water.

將淡忌廉放入煲內,用中小火煮至周邊有泡沫出現,加入糖,拌勻至糖溶化,離火。

將茶包放入煮過的淡忌廉內,靜置10分鐘。

用30毫升水與魚膠粉拌勻,然後放入一碗熱水內座溶。

Add gelatine into the cream, mix well and pour into dessert cups, chill for 3 hours or until set.

For the earl grey jelly, mix 400ml hot water with sugar. Then add in tea bag and rest for 2 minutes.

Mix  30ml water with gelatine together, then put in a bowl of hot water. Add gelatine into earl grey tea, mix well. Let it cool then pour into panna cotta, chill in fridge for one hour or till the jelly set.

將魚膠粉倒入淡忌廉內,拌勻,倒入容器內,放入雪櫃3個小時或至凝固。

伯爵茶果凍做法: 將400毫升熱水和糖拌勻,再放入茶包,靜置約2分鐘。

用30毫升水與魚膠粉拌勻,然後放入一碗熱水內座溶。將魚膠粉倒入伯爵茶內,拌勻。待涼後倒在已凝固的奶凍上,放入雪櫃約一個小時或至啫喱凝固即成!

  • 500 ml heavy cream / whipping cream
  • 125 g sugar
  • 7 g gelatine
  • 30 ml water mix with gelatine
  • 3-4 earl grey tea bags
Earl Grey Jelly
  • 1 earl grey tea bag
  • 5 g gelatine
  • 30 ml water mix with gelatine
  • 30 g sugar
  • 400 ml hot water
