Glutinous Rice Mini Cakes 糯米小蛋糕

When I was kid, I always love the mini cakes in traditional bakery. They come in a bag and it was such a treasure for a kid. They are so soft and light, just delicious.

This time I use glutinous rice flour instead of usual cake flour. It gives a chewy texture for the cake and trust me, it is sooooooo delicious. It is not as light as the normal cake because of the glutinous rice, but they are so nice!

小時候超喜歡傳統餅店一袋袋的小蛋糕(現在也超喜歡!)鬆軟美味的小蛋糕, 一個接一個,停不了口!

這次改用了糯米粉而不用低筋麵粉,做出來的蛋糕雖然沒有平常的超鬆軟感,但多了一份煙韌質感,超級好味!Mr P起初說這個蛋糕怪怪的,但之後卻不停吃!超好味,大力推介!

Beat the eggs and sugar in a large bowl, beat until very fluffy (a ribbon stage)

Sift in glutinous rice flour and baking powder, mix well.

Add in milk and vegetable oil, fold it gently. Pour the mixture into lined cake tin. Pop in preheated oven at 170C, bake for around 20-25 minutes or until fully cooked.

篩入糯米粉和泡打粉,拌勻

再加入牛奶和菜油,輕力拌勻。將蛋糕糊倒入烤盤內。放入已預熱170C焗爐,焗約20-25分鐘或至蛋糕全熟即成!

  • 4 Eggs 雞蛋
  • 90 g Sugar 糖
  • 135 g Glutinous Rice Flour 糯米粉
  • 5 g Baking Powder 泡打粉
  • 30 ml Milk 牛奶
  • 30 ml Vegetable Oil 菜油
