Chinese Almond Cookies 中式杏仁酥

Classic Chinese cookies – Almond cookies, I remember when I was kid, every time we went to those old style pastry shops, I always love to buy these little cookies, with almond and walnut flavour. They are so delicious and melt in your mouth.

It is actually really easy to make, perfect for afternoon tea snack or little gift to your friends.

中式的小點心 –  杏仁酥. 小時候每次到中式的餅店,都喜歡買杏仁酥和合桃酥。小小的中式曲奇,充滿杏仁香,超酥脆好味!

自己在家也可輕鬆做到,做法簡單,用來做下午茶點或送禮小點心,都非常讚!

Cream the butter and sugar together. Add in egg, mix well. 

Sift in flour, grounded almond (almond flour), baking soda and salt. Mix until combined. 

Simply form a dough, then wrap it with cling film. Chill in fridge for an hour. 

Take out a little piece of dough, roll into ball, press it and put an almond on top. 

Brush some egg wash on top, pop in preheated oven at 180C, bake for 18-20 minutes or until golden. Enjoy!

*This recipe can make 15-18 cookies 

用電動打蛋器打發牛油,再下砂糖,拌勻。再下雞蛋,拌勻. 

篩入麵粉、杏仁粉、梳打粉和鹽,拌勻. 

堆成麵糰,用包鮮紙包好,放入雪櫃待一個小時.

拿出一小份麵糰,搓圓,壓一壓,再放上一顆杏仁. 

塗上蛋液,放入已預熱180度C 焗爐,焗約18-20分鐘,至金黃色即成!

*這個食譜可做約15-18個餅乾

  • 120 g unsalted butter
  • 40 g sugar
  • 1 egg yolk
  • 130 g cake flour
  • 40 g almond flour
  • 2.5 g baking soda
  • 1/8 tsp salt
  • 15-18 whole almond
  • beaten egg
