Homemade Savoiardi 意式手指餅

I remember when I was kid, I always love these lady fingers. They are crispy on the outside but soft in the inside AND topped with lot of sugar (maybe that is why I like it!) I love it just eat it as biscuits, dip in coffee.

These lady fingers, in Italy they called Savoiardi, is the important ingredient for making Tiramisu. In UK, they use it to make triffle and you can also make the lovely Charlotte cake too.

It is super easy to make, not too sweet, also a perfect snack for kids!

記得小時候非常喜歡吃這個手指餅,就是平時用來做Tiramisu提拉米蘇,英式Triffle和Charlotte 蛋糕的手指餅 

外脆內軟,所以就容易吸收咖啡和甜酒 

材料和做法都非常簡單,做小朋友的小食也不錯

有人跟我一樣比較喜歡直接一條一條的吃嗎?

Beat the egg whites first (so you do not have to clean it before you beat the egg yolk, not the other way around tho) till it foamy, then add in sugar and beat until stiff peak.

Then in another bowl, beat the egg yolks with sugar until pale and fluffy.

Then put the egg yolks mixture into the eggs white mixture, gradually. Mix it gently.

Then sieve in cake flour and corn starch, gently fold until everything combined.

Fill the piping bag, cut the tip with the scissors, then pipe the batter in long thick line on parchment paper. Sprinkle some icing sugar on top.

Pop in preheated oven at 170C for 12-15 minutes, until light golden brown. Let it cool a bit then dust with icing sugar. Enjoy!

先用電動打蛋器打發蛋白,泡沫出現後加入糖,繼續打發至末端挺身

在另一個碗內用電動打蛋器打發蛋黃和糖,至淡黃色和稠身

分3次將蛋白霜加入蛋糊內,拌勻. 再篩入麵粉和粟粉,拌勻

將蛋糊放入擠花袋內,剪一個小口。在鋪有烘焙紙的烤盤上,擠出長條形狀。再在上面灑上糖粉。放入已預熱170度C焗爐,焗約12-15分鐘至微微金黃色

待涼後再灑上糖粉即成

*如沒有粟粉,用低筋麵粉替代

Ingredients
  • 2 Egg white 蛋白
  • 20 g Sugar 糖
  • 2 Egg yolks 蛋黃
  • 30 g Sugar 糖
  • 30 g Cake Flour 低筋麵粉
  • 29 g Corn Starch 粟粉
  • Icing Sugar 糖霜
Instructions
  1. Beat the egg whites until foamy, then add in sugar, continue to beat until stiff peak formed

  2. In another bowl, beat the egg yolks with sugar until pale and fluffy

  3. Gradually add the egg yolk mixture in the beaten egg whites, fold it gently

  4. Sieve in flour and corn starch, fold it gently until everything combined

  5. Fill the pipping bag, tip it with a scissors. Then pipe the batter into thick long line on parchment paper. Sprinkle some icing sugar on top

  6. Then pop in preheated oven at 170C, for 12-15 minutes or until light golden.

    Let it cool a bit then sprinkle more icing sugar on top. Enjoy!
